Ingredients
- 1.5 lbs Baby Yukon Gold Potatoes

Instructions
Boil potatoes in salted water until fork-tender (approx. 15 mins). Crucial: Drain and let them steam dry for 5 minutes. Moisture is the enemy of crispiness.
On a flat surface, gently press each potato with the bottom of a heavy glass until approx. 0.5 inch thick. Aim for jagged edges.
